Potato Salad with Sechler's Relish
This classic potato salad is sure to please everyone at your picnic!
Ingredients:
- 2 lb potatoes
- 1/3 cup salad oil
- 1/4 cup sweet pickle juice (some great options are Whole Sweet Gherkins, Candied Sweet Gherkins, Candied Sweet Dill Chunks, or for a fruity, citrus flavor, Candied Sweet Orange Chunks)
- 1 1/4 tsp salt
- 1/8 tsp pepper
- 1/3 cup chopped onion
- 1 cup Sweet Pickle Relish (Sweet Diced Salad Pickles are another great option. For a spicy kick, try our Jalapeno Sweet Relish)
- 2/3 cup chopped celery
- 2 hard-boiled eggs, chopped and chilled
- 1/2 cup mayonnaise or to taste

Instructions:
- Cook potatoes in boiling salted water until tender. Drain, peel and slice potatoes while still warm.
- Blend oil, pickle juice, seasonings and onion in large bowl; add potatoes, onion and relish of choice.
- Toss lightly. Chill several hours
- About 1 hour before serving time add celery, eggs, and mayonnaise. Toss lightly. Chill.
